I've not posted a recipe in ages and I know how some of you like my recipe posts and I love cooking (especially desserts) so here is another one. I shared another cookie recipe here but I thought I'd share a more winter appropriate cookie recipe. This one has the addition of oats which I always think of as a more winter food. To me there's nothing better than snuggling up on the sofa with a book, a cup of tea and a jumbo oaty cookie. I love baking on Sundays as well. Sundays in my house are very relaxed and consist of magazine reading, long showers and a spot of baking.
Ingredients
3/4 cup of flour (plain)
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons of butter or margarine
1/3 cup brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup of oats
3/4 cup of plain chocolate chips
1/2 cup of walnuts - chopped.
Method:
- Preheat oven to 375°F (190°C).
- Line baking tray with greaseproof paper.
- Mix flour, baking soda and salt in a mixing bowl until they are well blended.
- In a saucepan on low heat gently melt the butter. Once melted remove the saucepan from the heat and stir in brown sugar and granulated sugar. Use a wire whisk to mix together until the mixture becomes a smooth and thick consistency.
- Whisk in egg and vanilla extract.
- With a wooden spoon stir in the flour mixture, then add the oats, chocolate chips and walnuts until all the ingredients are combined.
- Using your hands form the mixture into twelve equal sized balls and place onto baking tray. Make sure that there is a decent gap between them as they'll expand whilst cooking.
- Bake for 15-20 minutes (or until golden brown), and serve warm with a nice cup of tea.
